Khorasan Kamut® wheat comes from an ancient origin and it is the ancestor of modern durum wheat. It has never undergone crossings with other types of wheat in favour of its yield but instead at the expense of its quality. Compared to classic durum wheat, this grain is two or three times larger and contains from 20% to 40% more protein, higher percentages of lipids, amino acids, vitamins and minerals. It also presents a valid alternative to all people sensitive to wheat gluten as it contains a very little amount of it.
